Baked Oatmeal
BAKED OATMEAL - a VCBC breakfast tradition
1/2 cup sugar
1/2 cup vegetable oil
2 eggs
1 3/4 cups dry oats
2 tsp baking powder
1/2 tsp salt
1 cup milk
Mix together sugar, oil, and eggs until well blended. Add oats, baking powder, salt and milk.
Let sit overnight in the bowl under refrigeration. In the morning, stir and pour into greased 9x9-inch baking pan. Bake uncovered for 25-30 minutes at 350. Cut into squares and serve in bowls with cinnamon-sugar and additional warmed milk.
Potato chip Cookies
1 cup crushed potato chips
1 pound butter or margarine
1 cup sugar
1 tsp vanilla
3 cups flour
Combine all ingredients and mix until well blended and smooth. Form dough into 1 inch balls. Bake for 15 minutes at 350. Cool; then dust with powdered sugar. Makes about 2 dozen cookies.
Brownie Crinkle cookies
Yield: approx 25 cookies
15 oz. (by weight) brownie mix
1/2 cup flour
1/4 cup vegetable oil
1 egg
2 Tbsp. water
1 cup chocolate chips
Powdered sugar
In mixer bowl, using paddle attachment, mix brownie mix and flour. Add oil, egg and water; mix well. Add chocolate chips until blended throughout dough.
Shape the dough into balls and roll the dough ball in powdered sugar to coat. Place cookies – 4 x 6 – on full size sheet pan that is lined with a paper pan liner.
Bake for approximately 12-15 minutes or until the tops of the cookies just begin to crack. Do not overbake. Cool before transferring to serving tray or storage container.
